A Taste of the Past: Why Tibiao Bakery is Iloilo’s Living Time Capsule

There’s a certain kind of magic that comes with stepping into a place that feels untouched by time. In a world where everything is constantly changing, finding a little pocket of the past is a special kind of comfort. For me, and for many Ilonggos, that place is Tibiao Bakery, Inc. on Jalandoni Street, right across from the University of San Agustin.

Walking through its doors isn’t just a trip to buy bread; it’s a journey back in time. So much of what I see today is exactly how I remember it from my childhood. It’s a living time capsule, preserving the little details that have made it a beloved local institution for decades.

The vintage glass display case still proudly shows off all the fresh breads, each one looking as tempting as ever. The classic menu board, with its familiar font, remains unchanged. And my favorite part? The unique system of waiting numbers on a stick—a charming tradition that still works perfectly. The ambiance is made even more nostalgic by the colorful cartolina flower cutouts on the ceilings, a throwback to how my classmates and I would beautify our elementary school bulletin boards. Even their delivery vehicle is a classic throwback that looks straight out of the past.

The only thing that seems to have changed are the chairs. I still remember that the old ones were connected to the tables, but even that small difference makes the enduring constants stand out even more.

But of course, the most important part is the taste. After all these years, my favorite breads—the teren-teren, mini cheese, and Spanish bread—are still just as delicious as ever. They are a comforting constant in a world that’s always changing.

Tibiao Bakery also shows that it can keep up with the times while staying true to its roots. They have a good stock of the ube cheese pandesal, a favorite from the pandemic era, proving they’re still keeping up with the new trends while holding on to their timeless classics.

This place is more than just a bakery; it’s a testament to the fact that some of the best things in life are the ones that never change.
