Iloilo Pancit Batil Patong is a fusion of 2 different cultures. It is cook it to taste as close as the authentic pancit of Tuguegarao City and mixed with local ingredients to add the Ilonggo flavors.
It is made from noodles, toppings which can range from lean carabeef, pork liver, carrot, cabbage, fried garlic, chorizo bilbao, egg, chicharron and special sauce.
These were the main parts of the meal – the pancit (the noodles), the batil (the sauce) made from egg and broth and the patong (the toppings). Adding slices of lechon manok, liempo or lechon belly on top of the many toppings will seal the deal.
It is best all-day. From breakfast, lunch, merienda, dinner and midnight snack.
